New Orleans Style Red Beans and Rice Recipe
A tradition on Mondays in New Orleans is to serve a generous portion of red beans and rice with pieces of ham and smoked sausage. This recipe also works on other days with tasty results.
Ingredients:
- 3 1/2 quarts water
- 1 package Cookin' Cajun New Orleans Style Red Beans and Rice Blend
- 1 lb dry red kidney beans
- 1 to 1 1/2 pounds ham and or smoked sausage
- 4 to 6 cups cooked rice
Directions:
Soak beans overnight in a 1 gallon container with cold water filled to cover beans completely.
In a large, 6 quart pot over medium high heat, add water, Red Beans Seasoning Blend, beans, and ham or smoked sausage. Cover and bring to a boil. Reduce heat, uncover and simmer for 2 1/2 to 3 hours or until beans are tender. Stir often. For creamier beans add a half a stick of butter or margarine. When done serve over cooked rice.
Accompany with toasted French bread and green salad.
